The cuisine at Ristorante 1905 is inspired by local traditions, drawing on folk stories, ancient cookbooks and a close relationship with the artisans who are the driving force behind Friuli’s agri-food heritage.
The restaurant offers a contemporary interpretation of the flavours of the past, breathing renewed elegance into humble ingredients and forgotten traditions. The three tasting menus take guests on a culinary journey that spans the whole of Friuli-Venezia Giulia, from the Carnic Mountains to the Adriatic coast, offering a taste of our regional identity and a heartfelt welcome from a land rich in character.
Chef Stefano Basello and his young brigade are deeply committed to protecting this land through waste reduction techniques and circular economy projects developed with nearby farms. Our knowledgeable dining room team also shares the stories of these farms with our guests.
