Born in 1974, Stefano Basello started out in the world of cycling before realising that cooking was his true passion – a talent that he nurtured with care and patience.
His culinary journey with traditional hands-on training. He has since gained nearly two decades of experience working at the historic Hotel Là di Moret in Udine, which is owned by the Marini family. He first honed his skills under the guidance of Chef Ettore Troian and later took the lead, heading a young and dynamic brigade.
Today, together with his team, he is bringing a bold new culinary vision to life: Ristorante 1905. This fine-dining space is where creativity meets consciousness, and every dish reflects a cuisine of depth and values that are deeply rooted in the identity of Friuli-Venezia Giulia, with sustainability as its guiding force.
